Mom's Chicken Enchilada's Go Low Carb







This recipe makes enough for 2 batches of sauce. I froze half of it.

The counts for the sauce, 1/10th of a recipe. I figure 5 servings per batch.

Cal:74.4 , Fat:6.1 , Carbs:4.2

In a separate pot, boil 4-6 boneless, skinless chicken breast until they are fall apart tender. Make the sauce in another pan and add shredded chicken. Mix well. In the traditional recipe this is stuffed inside tortillas and more sauce is put over top and it is baked.

The counts above don't include the chicken, but it wouldn't effect the carbs, just the calories and fat counts.

  2. I put everything into Fitday and that's what I use to calculate my carbs. I don't count net carbs so I don't usually post net.
